Christmas Cookies
I used a recipe from our old Be-Ro flour produced book.
The Rich Biscuits recipe requires 8 oz. Be-Ro S.R. Flour, 4 oz. Caster Sugar, 4 oz. Margarine or Butter, one egg (beaten), and the rind and juice of half a lemon.
There are lots of variations on the recipe in the book and I put my own twist by swapping the "juice and rind of one lemon" for milk for binding with a pinch of salt, few drops of vanilla essence and decent shake of the ginger and cinnamon.
First mix the flour and sugar. Then rub in the butter to make 'breadcrumbs'. Add the beaten egg and flavourings.
Roll out the mixture quite thin. Cut into desired shapes. I chose stars and Christmas trees.
Bake in a moderate oven Gas 4/180°C/350°F for around 15 minutes.
When cool decorate if you wish.
